Gluten-Free Banana Bread

Quarantined? Perfect time to get baking!

As we head into our houses (and may not come out for a while?!), I’m starting to think about all the things I could be doing if I could leave the house. But, that's not the right way to think!

This banana bread is the perfect way to occupy yourself while you're holed up inside. Your family getting on your nervous? Escape to the world of baking... just be warned you might eat it all.

Completely gluten-free (of course), with an option to be dairy-free - this banana bread is delicious, and just sweet enough! When you make it, be sure to tag me in your photos #OneBiteGlutenFree!

Prep Time: 10 minutes

Total Time: 1 hour, 10 minutes



What You Need:

- 2 cups gluten-free flour, I only use King Arthur Measure for Measure

- 1 tsp baking soda

- 1 tsp baking powder

- 1/4 tsp salt

- 3-4 very ripe bananas

- 1/2 cup sugar

- 1/2 cup butter (option for dairy free butter)

- 2 eggs

- 2 tbsp almond milk

- 1/2 tsp vanilla

- 1 cup chocolate chips



What You Do:

1. Lightly grease a 9x5" pan (I love that these have lids for easy storage).

2. Mix flour, baking soda, baking powder, and salt in a large bowl. Set aside.

3. In a separate bowl, whisk together butter and sugar. Stir in eggs, milk, vanilla, and mashed bananas. Stir until mixed.

4. Stir wet ingredients into dry mixture, stir until combined. Fold in chocolate chips if desired.

5. Pour into prepared pan, bake for 50-55 minutes until a toothpick comes out clean.



It's the perfect quarantine snack. Believe me!
