Freezer Meal Prep: Marinated Chicken Thighs

Prepping my freezer before baby!

Baby is six weeks old, and just getting around to posting the final postpartum freezer prep recipe! This is one of my absolute favorite recipes - we eat this weekly, and more in the spring/summer when my fiance can grill.

Marinated Chicken Thighs

You Need:


Ingredients:

  • 1-1.5lb chicken thighs
  • 1/4 cup balsamic vinegar
  • 1/2 cup Coconut Aminos, I get mine at Trader Joes
  • 1 tbsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp chili powder
  • 1/2 tsp crushed red pepper flakes


Instructions:

  1. Label your bag now - what it is, when to eat it by (freeze for up to 3 months), and instructions when ready to cook (see below).
  2. Mix all marinade ingredients together (balsamic through red pepper flakes above). Stir well.
  3. Add your chicken thighs to a freezer bag, and cover with marinade.
  4. Let marinate for 30-60 minutes, then freeze flat.


When ready to cook:

  1. When ready to cook, defrost completely in the fridge.
  2. Cook as desired, we love to grill chicken thighs but its delish in the oven or stovetop, too!
  3. Serve with rice and veggie of choice.
